The dog days of summer July 3 to August 11 are well upon us and fishing, at least in many of our Southern Interior lakes, has taken a turn for the worst. Most fish, it would seem, have made a beeline for the bottom of the lake where water temperatures are a bit cooler and the water contains more oxygen. As water temperatures rise, the level of dissolved oxygen particles becomes depleted making it harder on fish to absorb oxygen through their gills — in effect, it makes it harder for them to breath.
Having said that, fish usually will become more active in late evening when and if water temperatures have cooled off enough. Another problem with extended warm temperatures is that in many lakes, any fish that you might catch and want to eat are, well, not really all that good to eat.
Well it doesn't, in my experience. Probably what you are experiencing is the bitter, mouth-drying effect of compounds known as tannins. These occur in cranberries and in wine, although predominantly in red wines. Why does fresh squeezed orange juice taste better?

Many attribute this from the feeds, but there is little evidence that the feed imparts the flavor. There are many types of fish with a mild flavor similar to chicken. The best fish to start off with are tilapia, arctic char, cod, haddock, flounder, sole and walleye. You can substitute any of these fish into your favorite chicken recipe.
Shrimp and scallops also have a nice, mild flavor. Wash with water then put them in a bowl. Pour 1 cup of vinegar over the fish. Ensure that even the inside part of the fish where the slit is from being gutted is also flushed with vinegar. The fish does not get the vinegar taste when you fry or cook them.
